1 c. oil
2 c. sugar
3 eggs
3 t. vanilla
2 c. shredded zucchini
3 c. flour
1 t. baking soda
1 t. salt
3 t. cinnamon
¼ t. baking powder

Directions:
Directions:
Beat oil, sugar & eggs together well. Add vanilla & shredded zucchini. Mix well. Add flour, baking soda, salt, cinnamon, baking powder and blend. Put batter into greased pans. Bake at 350° for1 hour for 2 lg. loaves or 35 minutes for 3 loaves. This is great as apple bread too. Just substitute shredded apples for the zucchini. You can also use apple sauce for the oil in the apple bread variation.
