20 lb. ham
2 c. coarse bag salt
3 Tbsp. brown sugar
2 Tbsp. black pepper
1 Tbsp. red pepper

Directions:
Directions:
Mix well: sugar, salt, black pepper and red pepper. Lay newspaper down and sprinkle with salt. Lay ham skin side down on paper. Rub sugar, salt, pepper mixture over ham. Fill hock with mixture.

Wrap tightly with paper (mark hock end). Put in bag, tie and hang with hock end down.
