7 lbs. Cucumbers
2 C. Lime
1 Gallon Water
10 C. Sugar
3 Qts. Dark Vinegar
2 Tlb. Salt
1/2 Box Pickle Spice

Step 1.
Wash and slice cukes. Mix water and lime. Add cukes; let stand 24 hours in large container. Remove cukes; wash in clear water 3 to 4 times. Let soak in ice water for 2 1/2 to 3 hrs.. Remove cukes from water and drain for 15 minutes.
Step 2.
Tie spice in cloth bag; add sugar, salt, vinegar, 1 gallon water and spice bag in large pot (large enough to hold water and cukes); heat but do not bring to a boil; add cukes and simmer for 2 to 3 hours. Remove from heat and let cool for 20 minutes. Pack cukes in jars (pints), add liquid. Leave a space of 1/2" at top of jar, seal and store in pantry.
