7 lbs. cucumbers, 3" or smaller for whole, Large cut in chunks
1 Pint Salt
1 Gallon Cold Water
2 Cups Vinegar
1 Rounded tsp. Alum
3 Pints Vinegar
3 lbs. Sugar
1 oz. Whole Allspice

Directions:
Place cucumbers in a stone jar and cover with the salt and water brine. Let stand 2-4 days, pour off brine, rinse with cold water. cover with clear cold water, let stand 2-3 days. Put in kettle with the 2 cups vinegar and enough water to cover; add the alum and simmer for 2 hours. Pour off liquid and place pickles back in stone jar. Heat the 3 pints vinegar, sugar and allspice, pour over pickles and let stand till next day. Pour off liquid and bring it to a boil and pour over pickles. Next morning, pour liquid into a pan, pack pickles in jars, bring liquid to a boil and pour over packed pickles and seal.
