8 slices bacon
1 1/2 c. frozen hash brown potatoes
Dash salt
Two Dashes pepper
6 eggs
1/2 c. milk
1/4 tsp. salt
1/2 c. shredded Cheddar cheese (2 oz.)

Directions:
In a heavy 10-inch skillet, arrange bacon slices. Cook until bacon is crisp, turning often. Remove skillet from heat. Remove and crumble bacon. Pour off all but 2 T. bacon fat. Add potatoes to skillet. Sprinkle with dash of salt and pepper. Return skillet to heat and stir-fry until potatoes are light brown.

Beat together eggs, milk, 1/4 tsp. salt and dash pepper. Pour over browned potatoes in skillet. Cook without stirring until mixture begins to set on the bottom and around edges. Using a large spoon or spatula, lift and fold partially cooked eggs so uncooked portion flows underneath. Continue cooking over medium heat for about 4 minutes or until eggs are cooked, but still glossy and moist. Arrange crumbled bacon on top. Sprinkle with cheese.
