"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

2 c. flour
1 tsp. salt
2 tsp. cinnamon
1 1/2 tsp. baking soda
1 1/2 c. sugar
1 c. chopped nuts
2 c. apples, sliced thin
2 eggs
3/4 c. Crisco oil
1 tsp. vanilla

Lemon Sauce:
1/2 c. sugar
1 T. cornstarch
dash of salt
dash of nutmeg
1 c. water
2 T. butter
1 1/2 T. lemon juice

Sift dry ingredients together, then fold in nuts. Add apples. In a small bowl beat the 2 eggs and add the oil and vanilla. Beat until foamy. Add to apple mixture and stir until combined. Place batter in a greased and floured 8x8 baking pan. Bake at 350 degrees for 40-50 minutes, or until toothpick comes out clean. Serve with lemon sauce.

To prepare lemon sauce place the first 5 ingredients in a saucepan and cook over low heat until thick and clear. Remove from heat and stir in butter and lemon juice. Blend throughly. Serve over warm apple cake. Makes 1 1/3 c. sauce.
