2 Lbs (about 6 medium) potatoes, peeled and thinly sliced
3 Tbs butter or margarine
1/4 c. onion, chopped
3 Tbs flour
1 tsp salt
1 can (12 oz) evaporated milk
1 cup water
1/3 c grated Parmesan cheese

Directions:
Directions:
Preheat oven to 350ºF. Grease 11" X 7" baking dish. Place potatoes in a large sauce pan; cover with water; bring to a boil. Cook over medium heat for 3 - 4 minutes; drain. In the same sauce pan over medium heat, melt the butter, add the onion and cook for 1-2 minutes. Stir in the flour, salt and pepper. Gradually stir in the evaporated milk and water. Cook stirring constantly, until mixture comes to a boil. Remove from heat. Arrange potatoes in prepared baking dish; pour milk mixture over the potatoes. Sprinkle with cheese. Bake for 25 - 30 minutes or until potatoes are tender and cheese is light golden brown.
