2 lbs cucumber
1/4 C ghee
4 cardamom pods
a 3" piece of cinnamon stick
3 C coconut milk
3 C sugar
1 T rose water

Peel and seed cucumber. Slice lengthwise into 1/2" slices and
cut into 2" x 2" pieces. Drop pieces into boiling water and boil
for 2 minutes. Drain. Melt ghee in saucepan. Add cucumber
and spices. Fry over low heat for 5 minutes. Add coconut milk
and bring to boil, reduce heat and simmer until cucumber is
Add 1/2 C sugar and cook over very low heat 2- 3 hours
adding 1/2 sugar every 30 minutes. Sprinkle with rose water
and let cool.
