1 lb. mahi mahi, fresh or frozen
2 tsp. olive oil
2 tsp, lemon juice
1/4 tsp. salt
Fresh ground pepper to taste
2 cloves garlic, minced
Capers (optional)

Directions:
Directions:
Cut the mahi mahi into 4 serving-size portions. Brush both sides of the fish with olive oil and lemon juice. Sprinkle with salt and pepper, then rub the garlic on the fish. To broil, arrange fish on the rack of a broiler pan that has been sprayed with olive oil cooking spray. Broil 4" from the heat for 4-6 minutes per 1/2" of thickness, or until the fish flakes easily when tested with a fork. If the fish is more than 1" thick, gently turn it halfway through broiling. Top fish with capers, if using.
