1 eggplant
Oil
Marinara sauce
Grated cheese
Directions:
Directions:
Cut eggplant into 1/2 inch circles. Put oil in frying pan and wait until oil is at the right temperature. Fry eggplant or just coat bottom of cookie sheet with oil and bake at 350º until cooked through. Drain eggplant and layer bottom of round pie plate with marinara sauce, layer eggplant, layer of sauce, grated cheese. Keep layering until all eggplant is used. Put under broiler for 5 minutes to brown.
