For the dough:
12-18 well beaten eggs
1 tsp. salt
12 cups of flour ( or enough for eggs)
2 sticks of butter
1 tsp. baking powder
For the filling:
5 to 6 pounds sausage (3 sticks)
3 large Mozzarella's
26 well beaten eggs
3 large containers of ricotta
3 pds or more of grated cheese

Directions:
Directions:
Mix dough and let set for 1 hour covered. Preheat oven to 350º. Roll out dough and fill center, Make individual pies into half moon shapes and flute edges. (Do not put too much flour in baking pan) Brush top with egg wash and make a slit in the middle. Cut off excess dough and make braids, Put an S braid for sausage pies and C braid for cheese pies. Cook for about 45 minutes.
