1 c. all purpose flour
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. nutmeg
1/2 cup unsalted butter, softens
1/2 cup sugar
2 large eggs, room temperature
1/2 cup whole wheat flour
3 large ripe bananas, mashed
1 tsp. vanilla
1/2 cut finely chopped walnuts

Preheat oven to 350º. Grease and lightly flour a 9x5x3-inch loaf pan. In a medium bowl, sift together the flour, baking soda, salt and nutmeg. Set aside. In a large bowl, cream the butter and sugar until fluffy, about 2 to 3 minutes. Add the eggs one at a time. Add in the sifted dry ingredients, and then the whole wheat flour, mixing well. Thoroughly mix in the bananas, vanilla, and nuts. Pour the batter into the prepared pan and bake for 50 to 60 minutes, or until a cake tester inserted comes out clean. Let cool for 20 minutes before serving.
