2 firm, ripe, avocados
3/4 c. finely chopped red onion
Juice of 1 lime
1 c. red ripe tomato
3 pickled serrano chilies, 1 Tbsp.
Salt to taste
Pepper to taste

Directions:
Peel avocados. Cut in half and remove and discard seeds. Cut avocados lengthwise into thin slices. Finely dice slices. There should be about 3 cups. Put one cup of cubed avocado, half cup of onion and half lime juice into container of food processor or blender. Blend until finely pureed. Scrape into bowl. Add remaining avocado,chopped onion, tomato (peeled, seeded and cubed) and chopped chilies. Add more lime juice if desired. Add salt and pepper to taste. Stir to blend.
