1/2 c. butter

2 eggs
1 c. sugar

2 Tbsp. bourbon
3 Tbsp. cornstarch

1 c. pecans, finely chopped
1 c. (6 oz.) semisweet chocolate morsels
1 9-inch unbaked pie shell

BOURBON FLAVORED TOPPING:
1 c. dairy topping
1 tsp. bourbon (to taste)

Melt butter and set aside.

In a medium bowl, beat eggs just to break them up, but do not get them too frothy. Gradually add sugar, mixing until just blended.

Stir in butter and bourbon. Blend in cornstarch. Stir in pecans and chocolate morsels. Pour into pie shell.

Bake at 350º for 45-50 minutes. Cool 1 hour before serving.

BOURBON FLAVORED TOPPING: Mix 1 c. dairy topping with 1 Tbsp. bourbon (to taste), until well blended. Top individual servings with topping.


Refrigerate leftovers. If pie cools completely, warm for 15 minutes at 350º before serving, or nuke it in the microwave.

This pie freezes well. I make it for Derby Day and garnish it with mint sprigs.
