1/4 c. butter or margarine melted
1 c. chopped onion

16 oz. sour cream
1 can cream of chicken soup

1 (20 oz.) bag frozen hash brown potatoes, thawed.
salt and pepper to taste
8 oz. sharp cheddar cheese, grated

potato chips, crushed.


Sauté onions in butter until clear but not browned.

Stir together sour cream, soup and sautéed onions in a bowl. Mix well.

Add potatoes, salt, pepper and cheese. Stir until potatoes are coated.

Pour into ungreased 9 x 13 baking pan. Sprinkle crushed potato chips over top.

Bake at 350º for 1 hour or until top is golden brown and bubbly.

This casserole may be prepared up to 24 hrs. in advance and refrigerated until needed.
