3 eggs
1 c. sugar

3/4 c. flour (all-purpose)
1 tsp. soda
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg

3/4 c. pumpkin

1/2 c. nuts, chopped (cook's choice)

FILLING:
1 c. powdered sugar
8 oz. cream cheese
2 tsp. vanilla
2 Tbsp. margarine

Directions:

Beat eggs for 5 minutes. Gradually add sugar.

Combine flour, soda and spices. Add alternately with pumpkin. Spread thinly in a well-greased and floured jelly roll pan (15 1/2 x 10 1/2 x 1 inch). Sprinkle with nuts.

Bake at 350º for 15 minutes. Immediately turn out on a tea towel that has been sprinkled with powdered sugar. Roll up like a jelly roll. Cool for 30 minutes. Unroll and spread with cream cheese filling and roll again.

FILLING: Beat all filling ingredients until smooth.


This is my favorite recipe from Carolyn. Sometimes when I came home from college, she would have baked me one. Once, she gave it to me on a pink depression glass plate.
