1 package coleslaw mix

For the dressing:
1/3 cup apple cider vinegar
3 T. sugar
1 tsp. salt
1/2 tsp. fresh ground black pepper
4 T. mayonnaise
2 T. sweet pickle relish

Because barbeque, especially spicy Carolina Q, can get a little spicy it's always nice to have a cool side to compliment it. The markets make it very easy these days with packages of pre-cut cabbage and carrots. For a homemade sauce, try this one from legendary Joes Stone Crab from Miami, Florida.

Mix the dressing ingredients in a bowl, combine with coleslaw mix. Let stand in refrigerator for at least 10 minutes. Serve cold as a side, or place a dollop on your best pulled pork sandwich.

Tip: Kentucky Fried Chicken makes a great slaw that saves you the time and effort if you are cooking for a large group.
