Left over BBQ rib meat, cut from the bone and chopped
1 pound fresh cleaned and peeled shrimp or andoullie
1 to 2 containers of Zatarains Jambalaya mix, depending on amount of leftover rib meat

I always tend to cook too many ribs, which isn't a problem, it leads to a great second day meal; Second Day Jambalaya. This recipe is about as easy as it comes. Just follow the recipe on the box and use your leftover rib meat.
