2 pounds ground lamb (AP)
1 yellow onion, chopped
3/4 cups fry bread crumbs
1/2 cup chopped fresh mint
2 cloves garlic, chopped
1 tsp ground cumin
3/4 tsp ground coriander
1 tsp coarse salt
1/4 tsp cayenne pepper
1 large tomato, diced
5 T. fresh cilantro, chopped
4 whole wheat pitas
1 cup low fat plain yogurt

Directions:
Directions:
Combine ground lamb, onion, bread crumbs, mint, garlic, cumin, coriander, sea salt, and cayenne pepper in a bowl. Mix thoroughly. Form the mixture into 4 patties about 3/4 inch thick. In a separate bowl stir together chopped tomato and cilantro. Let both sit refrigerated for 15 to 45 minutes. Remove 15 minutes before grilling.

Grill lamb burger over medium high heat turning often, for 10 to 12 minutes. Warm the pitas for 1 to 2 minutes before pulling burgers from the grill. Spoon a tablespoon of yogurt in each pita. Place each burger in a pita pocket and garnish with tomato and cilantro salad. Serve with couscous.

Serves 3 to 4.
