1 bunch green onions, chopped
4 medium cloves garlic, minced
2 T. olive oil
2 T. flour
1 can chicken broth
1 14oz can artichoke hearts, including juice
salt and pepper to taste
sprinkle of crushed, dried thyme
2 bay leaves
1 tsp sugar
1 cup milk
1 cup light cream (or whole milk)

Directions:

In soup pan, saute onions and garlic in oil until tender. Stir in flour. Pour in chicken broth and blend well. Bring to a low boil and cook, stirring, 1 minute. Cut artichokes into small pieces and add to soup mixture along with salt, pepper, thyme, bay leaves, and sugar. Simmer, covered, 10 minutes. Add milk and cream; heat just to boiling. Remove bay leaves before serving.
