3 medium onions, chopped
3 medium green peppers, seeded and chopped
3 medium celery stalks, chopped

1/2 cup vegetable shortening
3 eggs, slightly beaten 3/4 cup milk

Directions:
Directions:
*Chicken:
Mix together 1 teaspoon each slat and pepper in a small bowl. Sprinkle evenly over chicken pieces; rub in well. To a large saucepan or Dutch oven add 4 cups water, onions, green peppers, celery, and remaining salt and pepper. Bring to boil over medium heat. Add chicken pieces; bring to a second boil;; cook 10 minutes, stirring occasionally. Remove chicken pieces from broth with a slotted spoon. Set chicken pieces aside.
Stir together flour and 1/2 cup water in a small bowl until mixture is smooth and well blended. Stir gradually into broth. Bring to a boil over low heat; simmer 2 minutes. Turn off heat and let broth stand while you prepare the dumplings.

*Dumplings;
Mix together flour and sugar in a large bowl. Cut in vegetable shortening by hand or with a pastry blender until mixture resembles coarse crumbs. Make a well in the center of mixture. Add eggs and enough milk to form a firm dough that holds together well. Blend dough by hand for about 4 minutes, until smooth. Gather into a ball and place on a lightly floured work surface. Knead lightly 8 to 10 times. Tear off small pieces of dough, and shape with lightly floured finger tips in 1-inch balls. Bring reserved broth to a simmer over low heat. Gently drop in half the dumplings (about 15), making sure dumplings do not touch each other. Cover pan tightly; cook 12 minutes, until a toothpick inserted into the center of dumplings comes out clean. Remove dumplings to platter with slotted spoon. Repeat procedure with remaining dough. Push dumplings to the side of the saucepan. Add chicken pieces and reserved dumplings. Bring mixture to a boil over medium heat; reduce heat to a simmer.

Personal Notes:
Personal Notes:
I personally could eat dumplings all day long. This meal requires a lot of work and it's messy, and time consuming however, if you don't have anything better to do on a cold winter day try this. As Ximena, says,
"Yummy, Yummy, Yummy to my Tummy!"

This is something that Austyn, also likes a lot. Hope you make them Austyn, I love you.
