Ingredients: 16 doves 8 slices bacon 4 tbsp Worcestershire Sauce 1/8 tsp Tabasco 2/3 cup water or wine 12 oz mushrooms 2 tbsp butter 1 tsp lemon juice Flour to dredge dove salt and pepper to taste

Directions:Season doves with salt and pepper. Dust with flour and set aside. Brown bacon in large Dutch oven and set aside. Brown doves in bacon grease, add Tabasco, Worcestershire sauce and wine. Cover and cook for about 20 minutes then turn doves over and continue cooking for another 20 minutes. Add liquid as needed. Saute mushrooms in separate pan, in butter and lemon juice. Add to doves for last 15 minutes of cooking. Crumble bacon over the top before serving. You can also add cream to the sauce if you like. Be sure to thicken with a little flour, however. |

Notes: Here's where the men come in! Remember, the "hunters and gatherers"... If they had a successful hunting trip, this is a wonderful recipe that will celebrate the occasion. You can simply wrap in bacon and roast them in a little white wine, as well. Chutney is a nice condiment to have available. Dove are small, however, so serve a hearty side dish of country mashed potatoes or baked cheese grits and some fresh asparagus.
