Mexican-style Rice Recipe

1 cup long grain rice
1/2 cup vegetable oil
1 ripe tomato
1 yellow onion
1 clove garlic
1/2 tsp chile powder
2 1/2 cups chicken stock
salt to taste

Directions:
Directions:
Place tomato, onion and garlic in blender and puree until smooth. Warm the oil in a saute pan and add chile powder and pinch of salt. Brown slightly, then add rice and saute for 5 minutes until rice begins to turn light brown in color and get a little crispy texture, being careful not to burn. Add pureed vegetables and cook 5 more minutes. Add chicken stock, lower heat, cover and simmer for 25 minutes. Remove from heat and let stand for 10 minutes before serving.

This is the standard rice served with most Tex Mex cuisine. For a little gourmet flair, you can also try using tomatillos, which gives the rice a beautiful green color. You may have to adjust the spices slightly and don't use the chile powder.
