1/3 cup brown sugar
1/2 cup flour
2 tbsp shortening
2 tbsp butter
1/4 cup light corn syrup
1/2 cup almonds, chopped
1/3 cup mint leaves, chopped
4 cups fresh strawberries, pineapple, and kiwi, finely diced
1 box vanilla pudding

Directions:

Preheat oven to 350 degrees. Grease 2 sheet pans with butter and set aside.

Combine butter, shortening, corn syrup and brown sugar in saute pan and bring to boil, dissolving the sugar. Remove from heat and add flour and nuts, mixing thoroughly.
Drop spoonfuls of the cookie dough onto sheet pans and bake for 8-10 minutes. While still warm, place cookie dough over a wooden down or simply fold over gently to form a taco shape. Make vanilla pudding, following direction on box, and let cool. Let cookie taco shells cool completely, then fill each with a scoop of vanilla pudding and top with fruit mixture with fresh mint leaves. Save a sprig of mint to garnish.

This is a dessert we served at Vaqueros Restaurant. It is very light and delicious and makes quite an impression if you're hosting a special occasion dinner party...a touch of Texas gourmet!
