6 oz. garlic croutons
1/2 tsp. black pepper
1/2 tsp. cayenne pepper
1 tsp. chili powder
1 tsp. dried thyme
1/2 onion
1 carrot
3 garlic cloves
1/2 red bell pepper
18 oz ground chuck
18 oz ground sirloin
1 tsp. kosher salt
1 egg

for the glaze:
1/2 c. catsup
1 tsp ground cumin
dash Worcestershire
dash tobasco
1 T honey

Directions:

Heat oven to 325º

In a food processor combine croutons, pepper, cayenne, chili powder and thyme. Pulse until mixture is fine texture. Place mixture in a large bowl.

In food processor combine onion, carrot, garlic, and red pepper, pulse until finely chopped, but not pureed.

Combine veggie mixture, meats, with bread crumb, Season with salt and add egg. Combine thoroughly, but avoid squeezing meat.

Pack mixture into 10" loaf pan to mold the shape and turn out onto a parchment or foil lined cookie sheet. Insert meat thermometer and set probe for 155º.

Combine ingredients for glaze. Brush glaze onto meatloaf after it has cooked for 10 min.
