10-12 ripe plum tomatoes
¼ cup fresh limejuice
1 red onion, finely chopped
1 yellow onion, finely chopped
2 tsp cumin (freshly ground seeds or powder)
2 Jalapeno chiles, finely chopped
2 cloves garlic, pressed
½ cup cilantro
salt to taste

Directions:
Directions:
Boil tomatoes in water to loosen the skin, then drain, peel and crush. Add seasonings to the tomatoes and bring to a boil. Add onions and chiles and continue simmering until cooked down to desired consistency. Add cilantro and salt to taste. Refrigerate before serving.
