8-10 tomatillos
4 Jalapeno chiles, finely chopped (without seeds)
3 cloves garlic, finely chopped
1 small yellow onion, finely chopped
¼ tsp sugar
1/3 cup water
1 cup cilantro
¼ tsp ground green peppercorns
¼ tsp salt

Directions:
Directions:
Peel skins off the tomatillos and rinse well, removing any stickiness. Cut in half and place in food processor with the remaining ingredients. Blend to desired consistency.

(You may substitute the Jalapeno chiles with Serranos, or for a milder version use Poblano chiles. You may also broil the vegetables for a roasted taste, if you desire. If you like it very hot, leave the seeds in the chiles and/or add more to the recipe.) Serve chilled or room temperature.
