3/4 lb ground turkey
1 c diced onions
2 1/2 c shredded cheddar cheese
1 c refrigerated hash browns
1 - 4oz can green chilies
10 - 10" flour tortillas
1/3 c water
1 pkg taco seasoning
1 10-15 oz can enchilada sauce
1 can black beans

Tomatoes, shredded lettuce, sour cream

1. Preheat oven to 375
2. Preheat large saute pan on medium.
3. Place turkey, onions, green chilies in pan 5 - 7 minutes or until brown, drain if needed.
4. Stir in taco seasoning, water, potatoes and black beans
5. Assemble enchiladas as follows:
With tortilla on a flat surface, place 1/4 c meat. Roll to form cylinder shape, arrange seam side down in 10" x 13" baking dish. Repeat with all tortillas. Pour enchilada sauce over filled enchiladas. Sprinkle with cheese.
6. Bake 12 minutes.
Top as desired
