10-12 Lb. Pork Roast
2 Large Garlic Cloves, Chopped
2 Onions, Chopped
Salt and Pepper to Taste

Make slits in roast with knife about 3 inches deep and 5-6 inches apart. In a small bowl, mix garlic, onions, salt, and pepper. Dampen mixture with water. Rub seasoning over roast. Heat small amount of oil in deep, heavy iron pot. Brown roast well on all sides. After browning, add 3/4 cup of water and cover. Let cook on high heat for 5 minutes. Reduce heat and let simmer, turning occasionally. Bake approximately 4 hours or until well done.
