4 cups packaged seasoned cornbread stuffing mix
2 cups packaged herb stuffing mix
2 cups crusty white bread (sour dough is delicious), torn into small pieces
2 cups chopped onions
1/2 cup chopped mushrooms (optional)
1 cup chopped celery
1 cup finely chopped carrots
1/2 cup unsalted butter
2 eggs
2 teaspoons dried thyme
Sage to taste
Poultry seasoning to taste
Salt and pepper to taste
Dash of cayenne pepper
1/2 cup dried cranberries or dried cherries (optional)
1/2 cup slivered almonds (optional)
3-4 cups chicken broth

Directions:
Directions:
Preheat oven to 375º. Grease or Pam a 13 x 9 inch casserole. Placed stuffing mixes and crumbled bread in a large bowl. Combine eggs and broth in a separate container.

Saute onion in butter about five minutes or until translucent. Add carrots, celery, thyme, and cayenne. Cook over medium heat until vegetables are soft, 5-10 minutes. If using mushrooms, add them now and cook for 3-5 minutes. Season vegetables with salt and pepper and other seasonings. Add cooked vegetables to bread. If using dried fruit and nuts, add them now.

Add bread/vegetable mixture to prepared casserole. Pour most of the broth/egg mixture over the bread/vegetable mixture. Cover and bake 30 minutes. Check mixture to see if it is as moist as desired; add more broth if needed. Remove cover and bake for another 15-30 minutes or until dressing is hot and top is beginning to brown.

Bread can be adjusted according to taste, using more or less cornbread, cornbread stuffing mix, herb stuffing mix or other bread. Recipe can easily be doubled.
