1 cup milk
2 teaspoons Dijon mustard
Nutmeg

4 egg yolks
2/3 cup freshly grated Gruyere cheese
1/3 cup freshly grated Parmesan cheese
5 egg whites

Preheat oven to 425º. Butter a 4-cup souffle dish. Fit with a buttered wax paper ring that extends 3 inches above the rim.

Melt butter in a saucepan over medium-low heat. Add the flour, and cook, whisking, for 3 minutes. Add the milk, mustard, nutmeg, salt, and pepper; simmer, whisking occasionally, for 5 minutes. Remove the pan from heat and whisk in the yolks, one at a time. Stir in the Gruyere and 1/4 cup of the Parmesan.

In the large bowl, beat the egg whites with an electric mixer until they hold stiff peaks. Stir one quarter of the beaten egg whites into the egg yolk mixture. Gently fold in the remaining egg whites. Pour into the souffle dish and sprinkle with the remaining Parmesan.

Place the souffle dish in the lower third of the oven and reduce the oven temperature to 375º. Bake for 25-30 minutes, or until puffed and browned. Remove the collar and serve at once.
