2 cups all purpose flour
1 T. baking powder
1 T. sugar
1 cup milk
1/2 cup mayonnaise
3/4 cup crisp bacon, crumbled
1/2 cup chopped, seeded plum tomatoes
2 T. minced fresh parsley

Directions:
Directions:
In a large bowl, combine flour, baking powder & sugar. In another bowl beat the milk & mayo til smooth & stir this into the dry ingredients til moistened. Fold in the bacon, tomatoes & parsley. Fill greased or paper lined muffin cups 2/3rd's full. Bake @ 400 for 20-25 minutes. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

Do not substitute mayo with light mayo or fat-free mayo because the muffins don't hold together well without the "real thing".
