12 crêpes (prepared) **
8 eggs
4 T. butter
1/2 c. chopped onions
1/4 c. chopped celery
1/4 c. chopped green pepper
1 c. chopped tomatoes
2 T. cream
salt and pepper to taste

Directions:
Directions:
Melt 2 T. butter in skillet and saute onions, celery and green peppers until limp. Add tomatoes and cook an additional 3 minutes. Heat until mixture thickens.

Beat eggs slightly and in a separate frying pan prepare as scrambled eggs in the rest of the butter. Remove from heat and combine with cream, salt and pepper.

To assemble crêpes, place a spoonful of scrambled eggs down center of each crêpe. Then place a spoonful of vegetable mixture over top of eggs. Roll crêpe and place in buttered baking dish, seam side down.

Bake for 10 minutes at 350º F until heated through.

Optional: Sprinkle with shredded cheddar cheese and melt for 5 additional minutes.
