1 egg white beaten to stiff peaks
¼ tsp cream of tartar
½ cup minus 1 T. Smart Balance light
1 T. smooth all natural peanut butter
1/3 cup oat flour
1/3 cup whole wheat flour
1/3 cup plus 2 T. unbleached all-purpose flour
½ tsp baking powder
½ tsp salt
½ cup brown sugar
1/3 cup white sugar
½ tsp vanilla extract
3 oz. semisweet chocolate chips

Beat whites, add cream of tartar, set aside. Mix flours, salt & baking powder in a bowl with whisk, set aside. Cream butter, peanut butter until creamy, add sugars and vanilla. Add dry ingredients and combine. Fold in egg whites. Drop by teaspoonful onto cookie sheet lined with non-stick foil. Bake in preheated 375° oven for 10 min. Let sit on cookie sheet 1 minute before removing to wire rack to cool.
