2½ cups whole wheat flour
1 cup white flour
½ cup grains including: bran, wheat germ, oatmeal, or other
1 tsp baking soda
¾ tsp baking powder
¾ to 1 tsp salt


1¾ cup buttermilk (reserving ¼ cup)

Combine 4 cups total of dry ingredients. Adjust amounts to taste.

Stir in 1¾ cup buttermilk, reserving ¼ cup to use if needed to make the dough wetter. Gather into a large ball and knead on floured surface 10-15 times, turning dough as you go. Mold dough into round loaf and put on greased cookie sheet. Make a large cross across top of loaf, cutting about ½ way through dough. Bake in 375° oven for 40-50 min. Knock on the bread. If it sounds hollow, it’s done.
