3 Cups sifted all-purpose flour
3/4 tsp. salt
1/4 cup sugar
1 tsp. Baking soda
1/2 tsp. Baking powder
1/4 tsp. Cream of tarter
1/3 cup of margarine
1 1/3 cups low-fat buttermilk
1/3 cup currants

Preheat oven 350º. Lightly spray a cookie sheet with vegetable oil.
In a large bowl, sift together the first 6 dry ingredients, cut in Margarine with a fork until mixture resembles cornmeal. Add buttermilk and stir only until moist. Turn currants in slowly.
Shape into a ball and knead for 15 seconds.
Place dough on greased cookie sheet. With the palm of your hand, flatten dough into a circle (about 7 ix 5 and 1/4 inch thick). With a sharp knife cut a cross on top about 1/4 deep and as wide as the dough (this helps prevent the bread from cracking).
Bake 45 to 50 minuets.

This is Collins favorite breakfast treat. I add a little more sugar to the dry ingredients as well as after the bread is cool Collin helps sprinkle confection sugar on top. I have used raisins and chocolate chips however currants are the favorite in my house. I toast it and smear some butter on a slice for a quick breakfast.
