Carrots, grated
1 can crushed pineapple, drained
Mini marshmallows (optional)
Broken pecans
Mayonnaise (or Miracle Whip)
A little sugar (1 teaspoon or so)

Directions:
Directions:
Grate carrots and add a little salt. Add drained pineapple, sugar, marshmallows, pecans, and mayonnaise. Stir and serve.

This is a salad Mother used to make, and just like her pea salad, is something we all loved! There was never any written down recipe for this, but this is the best I can remember from when we used to make it together.
