2 lbs ricotta cheese
1½ cups unsifted powdered sugar
4 tsp vanilla
½ cup each finely chopped candied citron and candied orange peel (if you can't find these, substitute dried apricots and orange zest)
¼ cup chopped milk chocolate, or mini-chocolate chips
chopped blanched pistachios for garnish

Mix ricotta, powdered sugar, and vanilla until blended. Stir in citron, orange peel and chocolate. Cover and chill for several hours. Fill cannoli shells and garnish with pistachios. Sift powdered sugar over stuffed shells.
