1 coconut pie crust (recipe in this cookbook)

2c milk
2c sweetened shredded coconut
2t vanilla bean paste
4 egg yolks
1T corn starch
1T flour
1/3 c sugar
pinch salt

2c heavy whipping cream
1/3 c sugar
1 t vanilla bean paste

Bake pie crust and cool according to recipe

put milk, coconut & vanilla in med saucepan
heat milk over med low heat till barely steaming
turn off heat, add paste and steep for 15 minutes
put yolks, starch, flour, sugar and salt in a med bowl
whisk thoroughly to combine
temper hot milk into egg mixture gradually while mixing constantly
heat over med flame whisking constantly, till thick and boiling
whisk for 1 more minute & remove from heat
add butter and whisk to melt
transfer to med bowl
cover with plastic wrap touching cream
refrigerate till set, 1 hour
transfer coconut pastry cream into pie crust
smooth to fill crust

put cream, sugar & vanilla in COLD lg bowl
whip to almost firm peaks
pipe or spread cream over pastry cream
cool till ready to eat
you can garnish with toasted coconut or chocolate shavings
