1/3 c. butter
1/2 c. brown sugar
cooked peach slices

2 eggs
2/3 c. sugar

6 Tbsp. peach juice
1 tsp. vanilla

1 c. flour
1/3 tsp. baking powder
1/4 tsp. salt

Directions:
Directions:

Melt 1/3 cup butter in heavy 10-inch skillet or baking dish. Sprinkle with 1/2 cup brown sugar. Arrange drained cooked peach slices over sugar.


CAKE BATTER: Beat eggs until thick (5 minutes). Gradually beat in 2/3 cup sugar.

Beat in: 6 Tbsp. peach juice and 1 tsp. vanilla.

Sift flour, salt and baking powder; beat in all at once.

Pour batter over fruit and bake at 350º for 45 minutes. Invert on plate or cookie sheet. Serve warm.
