1/3 cup cider vinegar
1/3 cup vegetable oil
1/4 cup sugar
1 TB dijon mustard
1 tsp salt
1/2 tsp pepper
1 small onion, coarsely chopped
2 tsp poppy seeds

1 10-ounce package fresh spinach, torn
1 cup of strawberries, halved
1 cup of pecan halves, toasted

Directions:
Directions:
Combine first 7 ingredients in electric blender; cover and process until smooth, stopping once to scrape down sides. Stir in poppy seeds.

Combine spinach, strawberries, and pecans. Drizzle with poppy seed dressing.
