Raisin Spice Cupcakes Recipe

1 cup seedless raisins
cup Wesson oil
2 cups water
1 egg, beaten
1 cup granulated sugar
1 tsp. nutmeg, cinnamon, ground cloves, allspice, and salt
1 cup flour
1 tsp. baking soda
cup chopped walnuts

Cupcake Icing:
1 box powered sugar
1 cube butter, softened
cup milk (more if needed)
1 tsp. vanilla

Add raisins to water and boil 10 minutes-let cool. Combine flour, salt, baking soda and spices. Add oil, beaten egg, cooled raisins and water. Add nuts. Spoon into paper cupcake forms. Bake at 375 for 30-40 minutes.

For icing: Mix with blender and ice. Spread on cupcakes.

Makes 24 iced cupcakes.
