½ cup Wesson oil
1¼ tsp baking soda
1 cup granulated sugar
1 tsp. salt
2 eggs
4 T. buttermilk or sour milk (add 3 drops of vinegar)
1½ cup flour
1 tsp. baking powder
1 cup (2-3) very ripe bananas, mashed



Icing:
1 box powered sugar
4 bars unsweetened chocolate melted in double boiler
Approx ¼ cup strong coffee
Approx. 1/8 cup milk
1 tsp. vanilla

Directions:
Directions:
Mix oil & sugar with spoon-add yolks and mix well. Combine four, salt, baking powder and set aside. Stir baking soda into milk. Alternate flour mixture, milk, & sugar mixture until well blended. Add bananas. Fold in beaten egg whites. Pour into (2) 8” cake pans. Bake 20-30 min. at 350°.

For icing, mix ingredients in blender and ice cake.
