2 jalapeņo peppers, minced
1/4 C minced fresh cilantro
1 can (14 oz.) coconut milk
2 Tbsp. fresh lime juice
4 skinless, boneless chicken breasts

Cha-Cha Salsa:
1/2 C chopped tomato
1/2 C chopped purple onion
1/2 C chopped papaya
1/4 C chopped yellow bell pepper
1/4 C chopped green bell pepper
1-2 jalapeņo peppers, minced
2 Tbsp. fresh lime juice
1/2 tsp. chili powder
1 Tbsp. honey
Garnish: lime wedges

Chicken:
Whisk together first 4 ingredients. Cut chicken into 1-inch-wide strips, and place in a shallow dish; add milk mixture. Cover and chill 1-2 hours.
Soak 16 (6 inch) wooden skewers in water 15-20 minutes.

Drain chicken, discarding marinade. Thread chicken strips onto skewers. Cook chicken on grill, covered with grill lid; over medium-high heat,(350 degrees); 4-6 minutes or until done.

Cha-Cha Salsa:
Combine all ingredients in a medium bowl. Cover and chill 3-4 hours. Serve with chicken,

This recipe can be very hot if you add 2 jalapeņos to the marinade and salsa. If you don't like hot, use 1 pepper in marinade and salsa.
