6-8 medium-sized sweet potatoes
4 eggs, beaten
¾ cup brown sugar (light)
1 stick butter
1 cup half n half (or light cream)
A dash of cinnamon and allspice to taste
½ cup Sherry
½ cup pecans, chopped
¼ cup fresh-squeezed orange juice (cut fresh oranges in half using only the juice and reserving the shells)

Bake the potatoes for about 1 hour, until soft in texture. Peel and mash until smooth. Add butter, sugar, eggs, cream and spices and blend. Stir in sherry and pecans and bake at 350º for about 20 minutes.

Serve with a little butter and cinnamon on top. If you are entertaining guests, you can serve in fresh orange cups, cut in half.
