˝ lb bacon
˝ medium onion, sliced
1 green pepper, sliced
2 large carrots cut julienne style
4-6 cups cooked rice
Soy sauce
Black pepper to taste
Eggs, fried, optional

Directions:
Directions:
Fry bacon until crisp. Drain, crumble and set aside. Reserve the bacon drippings.

Sauté onions, green peppers and carrots in 3 table spoons bacon drippings until slightly cooked (vegetables should still be crunchy). Add cooked rice and a little more bacon drippings if necessary and stir until the vegetables and rice are incorporated. Add soy sauce and pepper to taste and stir completely. Top with a fried egg if desired.
