1 ½ cups fresh bread crumbs from French bread
6 cups whole milk
1 ½ T. Dijon mustard
¾ c. grated Asiago cheese (about 2.5 oz)
1 tsp. ground black pepper
1 tsp. sweet paprika
4 c. grated white cheddar cheese (1 lb)
8 T. (1 stick) butter, divided
1½ T chopped parsley
6 T. all purpose flour
1 lb. macaroni

Directions:

Mix breadcrumbs, Asiago, and paprika in medium bowl. Melt 6 T. butter in heavy large saucepan over medium heat. Add flour & stir 3 minutes. Gradually whisk in milk, then mustard and pepper. Cook until thickened, stirring often, about 10 min. Mix in cheddar cheese and parsley. Cool sauce slightly.

Preheat oven to 400°F. Butter 15x10x2-in. glass baking dish. Cook macaroni in pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain macaroni. Return macaroni to pot; mix in sauce. Season to taste with salt. Transfer mixture to prepared dish. Sprinkle with topping. Dot with remaining 2 T. butter. Bake until cheese is bubbling and crumbs are brown (40 min.). Cool slightly and serve.

Serves 12.
