Ingredients: Olive oil, for the bowl Coarse Kosher salt 1 large clove of garlic 4 oz. good Roquefort cheese 2 heads romaine lettuce Freshly ground pepper to taste
Dressing: 1/3 cup olive oil 4 tsp. red wine vinegar 1 heaping tsp Dijon mustard 1 ½ tsp Worcestershire sauce

Directions:Rinse the salad greens in cold water & shake out. Wrap the damp greens in several thick paper towels, then store them in a plastic bag in the refrigerator.
Place a little olive oil & some coarse salt in a wooden bowl. Rub the inner surface of the bowl with a cut clove of garlic. Place the Roquefort cheese, crumbled, in the bottom of the bowl. Tear the greens into bite-sized pieces and place on top of the cheese. Refrigerate until ready to toss.
Mix all the dressing ingredients together. Cover & leave at room temperature until ready to toss. Set out salt and pepper grinder.
When ready to serve, move the greens in the bowl to one side to expose the cheese. Pour the dressing over the cheese and mash with a fork until lightly blended. Toss thoroughly. Taste for seasoning and toss again. Serve immediately. |
