Gazpacho Recipe

1 cup chopped red onions
1 cup green bell pepper
1 cup English cucumber
1 cup chopped/peeled tomatoes
1 tsp. chopped garlic
1 tsp. kosher salt
cup tomato paste
1 T. sherry vinegar
cup olive oil
2 T. olive oil/extra
1 T. fresh lemon juice
3 cups tomato juice
Sprig of thyme

Mix all ingredients together in a bowl, cover and let sit in refrigerator overnight. Next day, remove thyme and blend all of the ingredients. Strain for a smoother texture and refrigerate until ready to serve.
