Caesar Salad Recipe

Dressing ingredients:
8-10 anchovy fillets packed in olive oil
2 cloves garlic
3 T. red wine vinegar
1 scant T. Dijon mustard
¼ cup shredded parmesan or asiago cheese
1 tsp. Worcestershire sauce
1 egg
¾ cup olive oil

4 heads romaine lettuce, inner leaves or bottom
2/3 of lettuce only
¾ cup finely shredded parmesan or asiago cheese
plain croutons

Put all dressing ingredients in blender, and blend until smooth. Place lettuce in large salad bowl & toss with dressing, croutons, & cheese. Serve cold with pepper.
